Yeast Fermentation

Yeast fermentation is the most economical eukaryotic expression system for scale up production of both secreted and intracellular proteins that require post-translational modifications, including humanized antibodies. Yeast fermentation has been also used in the production of chemical precursors, global food processing such as coffee and chocolate, or even wastewater processing. The use of headspace solid-phase microextraction followed by gas chromatography-mass spectrometry (HS-SPME-GC-MS) has contributed to the production of volatile compounds in wild strains. In addition, yeasts' uses also extend to other products of high interest such as the generation of fuel from vegetable sources.
